Pesto is a traditional Italian sauce originating from Genoa, composed primarily of fresh basil leaves, pine nuts, garlic, Parmesan cheese, and olive oil. Ingredients

  • 60g pine nuts, toasted
  • 100g fresh basil
  • 60g parmesan
  • 150ml olive oil, plus extra for cooking tomatoes
  • 2 garlic cloves
  • sourdough
  • cherry tomatoes
  • ricotta
  • 1/2 lemon, juiced
  • Seasoned Greetings pizza seasoning

Directions

Step 1

Toast your pine nuts in a dry pan over a low heat

Step 2

Put your basil, parmesan, lemon juice, olive oil, pine nuts and garlic cloves into a blender and blitz until smooth

Step 3

Add your tomatoes into a pan with olive oil and cook until soft and the skin begins to brown

Step 4

Toast your sourdough, and add your ricotta, tomatoes and pesto.

We like to finish with our Seasoned Greetings pizza seasoning, and some fresh basil leaves.
